Executive chef and co-owner James Moore has been cooking in fine dining kitchens around the globe for more than two decades. Originally from a small town outside Melbourne, Australia, he has worked in various food-destination cities including London, Vancouver and New York City, where he worked closely with chef Sean Hergatt of two-Michelin starred SHO and chef Ronny Emborg of two-Michelin starred Atera. James and co-owner Anthony Smith met while working in One Pico in Dublin in 2006.

D’Olier street co-owner Anthony Smith, a Dublin native, is the chef-owner of Dublin’s beloved Mr Fox restaurant. He moved to NYC, where James was living, in 2010 and the two worked together in some of the best restaurants in the city, including one-Michelin starred Country, one-Michelin starred Veritas, and one-Michelin starred Rouge Tomate.

Jane Frye, co-owner and general manager, has a background in food media and private catering in NYC. She spent her career in journalism interviewing some of the world’s best chefs, including Anne Sophie Pic and Thomas Keller, and going behind the scenes in some of the top restaurants. Her passion for hospitality is something she’s been honing since she was a teenager, growing up in Midwest America. She met James and Anthony while living in NYC.

Restaurant manager Scott White comes to D’Olier Street most recently from the two-Michelin starred restaurant, Aimsir, during which time Scott led the team in being named Food & Wine’s Restaurant of the Year two years in a row. Scott previously worked with Anthony at Mr. Fox, and is in charge of the wine program at D’Olier Street.

Head Chef Adam Jordan joined the D’Olier Street team in June of 2023. Jordan, who was born in Dublin and spent part of his childhood in Ontario, returned home to Ireland to finish school and work in some of the city’s top kitchens, including The Greenhouse under chef Mickael Viljanen and Chapter One under chef Ross Lewis. Jordan moved back to Canada in 2018 where he worked as head chef at one-Michelin starred AnnaLena in Vancouver. Now, back on home turf, Jordan is responsible for churning out some of D’Olier Street’s most visually stunning dishes, that are as exciting on the palate as they are on the plate.
